Gluten-Free Veggie Pizza

Gluten-Free Veggie Pizza

I never thought I could live without cheese, but I'm living without cheese and not missing it. When I learned it is best to eliminate dairy, I realized it meant I could no longer drink milk or eat cheese or yogurt. Yet, the more I learned about dairy issues, I decided I needed to do this, plus there are so many amazing dairy alternatives, such as unsweetened almond milk and unsweetened coconut milk. But, pizza without cheese? No way!! That couldn't possibly taste like pizza or taste good at all. Boy, was I wrong!

Nice Cream, the Simple, Delicious Alternative to Ice Cream

Nice Cream, the Simple, Delicious Alternative to Ice Cream

Dessert forever changed when I learned about "nice" cream, an ice cream alternative that is very nice to your body, the environment, and even your pocketbook. I say this because it is made with 100% whole foods an contains hardly any calories or fat (not that it is important to count calories on a plant-based diet), made without any animal products, and costs about $2 or less per batch, depending on your recipe. And whereas many homemade ice creams take a lot of time and effort, this recipe is easier to make than running out the deli for your sweet craving. You can make it in seconds!

Italian Tofurky Garden Pagodas

Italian Tofurky Garden Pagodas

I like to experiment and today, for lunch, I created Italian Tofurky Garden Pagodas. I started by pouring two cups of water in a casserole dish and adding a lot of fresh broccoli and cauliflower. Then I added Quinoa Garden Pagodas (uncooked), two Tofurky Italian Sausages in chunks, and Newman's Own Garden Peppers Pasta Sauce. I covered and baked at 375 degrees, stirred after 30 minutes, and then baked another 30 minutes. It was  delicious, but here are my recommendations.

The trick with the fruit juices is that you want to find ones without added sugar, which can be tough.

Janny's Grand Granola

Janny's Grand Granola

Need a new breakfast food? Try Granola.

Bake at 300 degrees for one hour, stirring every 15 minutes. Cool well. I divide into individual small glass containers to take to work for my lunch, and I put the rest in a large glass container with a lid. I always store in the refrigerator.

Top with any or all of the following: organic raisins, cranberries, bananas, blueberries, apples, pineapples. Pour on almond or coconut milk.

Berry Blast Smoothie

Ever heard of wedding crashers?!  Of course you have!  Well I'm here to crash onto Janet and Lacey's blog as a guest writer!  I love getting my fruits and veggies through smoothies.  They are a great substitute for soda, which is not good for your health at all.  With natural sugars that your body needs instead of refined white sugar and nutrients that are far more sustainable and effective than caffeine, I've been sending my Oster Versa blender into overdrive.
